(SPRINGFIELD) Whether making a signature dish or trying something new this Thanksgiving Day holiday weekend, the secret ingredient is always “food safety.” The Centers for Disease Control and Prevention (CDC) estimates 48 million people a year get sick from a foodborne illness, not to mention 128,000 people that are hospitalized, and over 3,000 people die. Everyone should adhere to the four food safety steps :
* CLEAN – wash hands, dishes, countertops, and utensils before and after preparing each food item
* SEPARATE – keep raw eggs, meat, poultry, and their juices away from foods that will not be cooked
* COOK – use a food thermometer to ensure all meat and poultry are fully cooked / color is not an indicator
* CHILL – divide leftovers in separate containers and refrigerate within two hours / use within four days
(EFFINGHAM) The Illinois State Police District 12 Troopers are out in extra force, along with hundreds of local law enforcement agencies, all teaming up for the Thanksgiving holiday weekend, looking for those driving impaired and not buckled up. The extra duty will include saturation patrols, roadside safety checks, other special patrols, and more. The enforcement effort will continue through the first of next week.
